Class Description
Italian food is one of the most popular cuisines around the world. From beloved pasta dishes to the ultimate crowd pleaser, pizza, it’s no wonder that Italian cuisine was recently recognized as UNESCO Intangible Cultural Heritage. But despite this global popularity, Italian pastries are woefully overlooked in the culinary world. In this session, you’ll learn about the millennia-old history and regional diversity of Italian pastries, get an overview of Italian baking vocabulary, and discover how the Italian diaspora has taken ancestral recipes and transformed them into culinary mainstays in their adopted countries. We'll end the class with a tasting of Italian pastries from different regions of Italy.
Kelsey Trotta is an award-nominated culinary translator. Her clients include Milk Street TV, National Geographic, The New York Times, and world-renowned chefs. Kelsey gave pastry translation lectures at the ATA Conference and for the ITI Food&Drink Network. She is writing a book on Italian pastries.
